The color is medium-dark, with green and orange reflections. The best known note is bitter, which quickly prevails after an initial sweet perception. Like black locust honey, it is very rich in fructose and remains liquid for a long time.

The intensity of the smell and aroma is strong: walnut husk, cinchona and cherry laurel flowers on the nose, sometimes with nuances of strawberry grapes, the aroma is dominated by herbaceous and earthy notes of rhubarb and gentian root.
